May Menu Notes: Summer Salad Ideas


5 ingredients or less!  Enjoy as a main course or a side dish, use seasonal fruits and vegetables for a light and nutrition packed meal!


Summer Salad Tip: On the weekend, fire up the grill and cook your choice of protein along with vegetables like peppers, zucchini, asparagus, and corn. Refrigerate and use in your summer salad all week!



Summer Salads:


Arugula, snap peas, onion, tomato                                              


Spinach, strawberries, feta, sunflower seeds


Spinach, blueberries, walnuts, asparagus


Romaine, avocado, red peppers, corn


Arugula, oranges, cucumber, almonds


Spinach, cucumber, green onions, mint leaves, chick peas


Kale, spinach, grapefruit, beet, goat cheese                                              


Arugula, watermelon, onions, feta, sunflower seeds


Romaine, pear, gorgonzola cheese, grapes

Home Made Salad Dressing Recipes:


Grapefruit Vinaigrette - ¼ C fresh grapefruit juice, 1 tbsp honey, 1 tsp Dijon mustard, 4 tbsp olive oil, black pepper to taste (don’t like grapefruit? Substitute with a citrus juice of your choice!)


Homemade Balsamic - Olive oil, balsamic vinegar, black pepper to taste


Lemon Garlic - Lemon juice, olive oil, crushed garlic clove, black pepper to taste


Healthy Ranch - ½ C greek yogurt, 1 clove crushed garlic, 4 tbsp olive oil, 1 ½ tbsp parmesan, 1 tsp dill, 1 tsp parsley, black pepper to taste
